Chicken Marbella
This mixture makes a chunky marinade. It’s delicious and my all-time favorite chicken recipe. I make a batch of this and keep it in my refrigerator for months.
Ingredients
- 1/2 head minced garlic
- 1/8 cup dried oregano
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1/2 cup pitted prunes, chopped
- 1/4 cup spanish green olives
- 1/4 cup capers & a drop of juice
- 3 bay leaves
- 1/2 cup chopped parsley
- 1/2 cup brown sugar
- 1/2 cup white wine
- salt and pepper
- boneless chicken cutlets
Directions
Combine all ingredients EXCEPT brown sugar, white wine and chicken. Let marinade mixture site overnight if possible (will almost be a paste by the next day). Arrange chicken in pan, spoon or rub marinade over chicken - even put some under the chicken, sprinkle chicken with brown sugar and cover with wine. Bake at 350 ° for 20-30 minutes, depending on chicken thickness.
